Hibiscus opens for dinner Monday through Saturday and features cuisine that is anchored in the modern chophouse genre while showcasing the best of local, regional and responsibly raised products. Wood cooking is a noted specialty at Hibiscus — especially when applied to pasture-raised steaks, poultry and game from nearby ranches — and much of the restaurant’s pristine seafood issues from the Gulf of Mexico. Appropriately, the beverage program at Hibiscus acknowledges the emergence of high quality Texas wines, along with spirits and cocktail concoctions with local and regional heritage. Hibiscus’ commitment to elemental cooking and thoughtful sourcing is echoed by its soulful, rustic decor, which was created largely from indigenous materials within a historic building in the heart of thriving North Henderson Avenue.
